Breakfast Cereal (Granola)

Ditch the BHT and other preservatives and make this healthy, clean Breakfast Cereal.  Start with this basic recipe and then customize it to your taste.  Each family member can add their favorite ingredients, making this a very kid-friendly and fun recipe.


Ingredients

  • 4 Cups Old-Fashioned Rolled Oats
  • 1 teaspoon Fine-Grain Sea Salt 
  • 1/2 teaspoon Ground Cinnamon
  • 1/2 Cup Coconut Oil, melted
  • 1/2 Cup Real Maple Syrup or Honey
  • 1 teaspoon Vanilla Extract

Optional Add-Ins

  • 1-1/2 Cup Raw nuts and/or Seeds 
  • 2/3 Cup Dried Fruit, chopped if large 
  • Baking Chips, added once the cereal is cooled 
  • Candy, chopped and added once the cereal is cooled
  • Coconut Flakes, added at the halfway point and stirred in
  • 2 teaspoons Orange or Lemon Peel, grated

Substitutions

  • Certified Gluten-Free Oats for Rolled Oats
  • Pumpkin Pie or Apple Pie Spice for Cinnamon 
  • Extra Virgin Olive Oil for Coconut Oil for a more Savory Flavor

Directions

  • Preheat oven to 350 degrees Fahrenheit
  • Melt coconut oil in the microwave, about 15 to 30 seconds
  • Line a large, rimmed baking sheet with parchment paper
  • In a large mixing bowl, combine the oats, salt, and cinnamon
  • If using nuts or seeds, add them to the bowl and then stir to blend
  • Pour in the coconut oil, maple syrup, and/or honey, along with the vanilla
  • Mix well until every oat and nut is lightly coated
  • Pour the cereal onto your prepared pan and use a large spoon to spread it evenly in a layer
  • Bake for 10 minutes
  • Remove cereal from the oven
  • If using coconut, add it in now and then, and gently stir
  • For extra-clumpy granola, press the stirred cereal down with your spatula
  • Bake cereal for an additional 10 to 12 minutes until it is golden in color
  • Remove from the oven and stir again if you are using this recipe as a cereal, and allow to cool
  • For clumpy granola, cool completely, undisturbed (at least 1 hour)
  • Top the cooled cereal/granola with any optional add-ins you would like
  • Store in an airtight container at room temperature for 1 to 2 weeks
  • To freeze, store in a sealed freezer bag in the freezer for up to 3 months

Yields: Approximately 8 Cups
