Ingredients

  • 1 Pound Lean Ground Beef 
  • 1 Small Onion, chopped
  • 1 teaspoon Garlic, minced
  • 1/2 teaspoon Oregano
  • 1/2 teaspoon Cumin
  • 1 (14 Ounce) Can Chili Beans, drained
  • 1 (16 Ounce) Jar Chunky Salsa
  • 1/3 Cup Cotija Cheese
  • 12 Fajita Tortillas
  • 2 Cups Cheddar-Jack
  • 3 Green Onions, chopped
  • Sour Cream and Salsa for Topping

Directions

  • Preheat oven to 350 degrees F.  Grease a 9x13-inch glass dish
  • Cook the ground beef and onion over medium heat until no longer pink.  Drain off excess fat
  • Add in garlic, oregano, cumin, and beans.  Heat for another 5 minutes
  • Stir in salsa and cheese until heated through
  • Spoon just shy of 1/4 cup into a Fajita shell.  Roll up tightly and place seam down into the prepared dish
  • Sprinkle Cheddar-Jack cheese and green onions over the top of the burritos.  Cover with foil and bake for 20 minutes
  • Remove foil and bake for an additional 10 minutes
  • Serve with additional salsa and sour cream
