Mediterranean Chicken with Stewed Tomatoes

Healthy eating does not have to be bland.  This recipe is sure to be a family favorite in your household.


Ingredients

  • 2-3 Pounds Chicken Breast
  • 1 Tablespoon Smoked Paprika
  • 1 teaspoon Salt, divided
  • 1 teaspoon Black Pepper, divided
  • 2 Red Peppers, sliced into strips
  • 5-6 Roma Tomatoes, sliced about 1/2 inch thick
  • 1 Red Onion, sliced 1/2 inch thick
  • 1 Tablespoon Olive Oil
  • 1 teaspoon Garlic, minced
  • Toasted Almonds

Directions

  • Preheat oven to 450 degrees F.
  • In a gallon-sized zipper bag, combine chicken, smoked paprika, 1/2 teaspoon salt, and 1/2 teaspoon black pepper. 
  • Shake the bag to coat the chicken.
  • Heat olive oil in a large cast-iron pan or other oven-proof skillet.
  • Brown both sides of the chicken, about 5 minutes per side.
  • Add red pepper, Roma tomatoes, and red onion over the top of the chicken.
  • Sprinkle vegetables with garlic, 1/2 teaspoon salt, and 1/2 teaspoon black pepper
  • Place skillet in oven and bake for 10 minutes.
  • Remove the skillet, stir the vegetables, then place the skillet back into the oven.
  • Continue baking for about 10 to 15 minutes, or until a meat thermometer reads 165 degrees F.
  • Top with toasted almonds.

Yields: Approximately 10 Cups

Serving Size: 1 Cup
